Q. Why are volume (ml) and weight (g) different?

Water (1.00 g/ml) weighs 1g per 1ml, but flour (about 0.55 g/ml) contains air between its particles, so a 200ml cup holds only about 110g. Soy sauce (1.15 g/ml) and honey (1.40 g/ml) are denser than water. These figures are estimates and do not guarantee an exact result.

Q. How many milliliters are in a cup? It depends on the convention

A 200ml cup is a common convention in Korean and Japanese recipes, but it is not universal. US recipes often use a 240ml cup as a rounded recipe measure; the US customary cup is about 237ml, so 240ml should not be read as exactly 8 US fl oz. When needed, switch the cup setting to match the recipe.

Q. Why digital kitchen scales (g) are recommended over cups or spoons

The weight of powders can change with packing, sifting, and moisture, even when the volume looks the same. Measuring in grams (g) with a digital scale improves reproducibility; volume conversions remain estimates.
